BEEF & APRICOT CASHEW BASMATI RICE

INGREDIENTS

  • 1 Lb Ground Beef or Beef Chunks
  • 6 Cups Basmati Rice (cooked)
  • 1 Cup Cashew
  • 2 Cups Dried Apricots (cut into 4 quarter pcs)
  • 1 Cup Sundried Tomatoes (chop small pcs)
  • 2 Tbsp Olive oil
  • ½ Bunch Parsley (fresh)
  • 1 Sm Sweet onion (chop small)
  • ½ Tsp Salt (to taste)
  • 4 Servings Citrusy -Dill SpiceBean

SUPPLIES

  • Large skillet
  • Medium pot with lid
  • Large spoon

HOW TO COOK

•In medium pot, prepare rice according to package directions. Set aside

•In large skillet heat oil then crumble in beef. Stir until lightly brown.

•Stir in onion until slightly caramelized.

•Add apricots. Continue to stir about 2 minutes.

•AddCitrusy -Dill SpiceBean ™. Mix well. Stir 2 minutes.

•Add salt, parsley. Stir well.

•Mix in cashews and tomatoes

•Remove from burner

•Fold in rice.

•Serve.
